Name the workload, not the server
Write one line per business system: what it does, who stops working when it stops, and how long they can be stopped before it costs money. A server list is inventory. A workload list is a recovery plan.

Set an RPO and an RTO you can defend
RPO is how much data you can afford to re-enter. RTO is how long you can be down. Pick numbers per workload, in writing. If nobody has ever written them down, the current answer is whatever the last restore happened to take.
